As we all know, there is not much that can't be improved with mushrooms. There are the obvious targets--pasta sauce, pizza, burgers, and omelets. But beyond the usual players, there is the often ignored field of the cold salad. Quite simply, sauteed mushrooms added to an otherwise cold salad produce magic. Cook them up with a touch of olive oil. Meanwhile compose a salad with your favorite mixed greens, a splash of balsamic vinegar, a sprinkling of dried oregano, some salt and pepper, and a touch of goat cheese. Then pour on the mushrooms while they are still hot and toss the salad. The mushrooms will slightly wilt the greens (in a good way) and melt the goat cheese (in a very good way). Voila--a delicious, phytonutrient-packed, low fat salad that leaves other salads out in the cold.
